My LFS "expert' tried to talk me out of setting up a sump for new 180g saltwater tank and use two canister filters instead. He claims that sumps are too much hassle and water evaporates rapidly. Any advice on this?

Canister filters are for fresh water. All the systems we design are sump systems.

My 12G just came out of a nitrate problem because of my filter cartridge. I lost some corals because of that.

Your LFS "expert" has no idea what he is talking about.  He is obviously a beginner that just does not know any better.  You should definitely go with a sump set-up with a large protein skimmer.  I would not set up my worst enemy with a 180 with canisters.  It will lead to nothing but problems.  Give me a call here at the shop and we can talk in depth on this subject, I will be happy to help.  800-993-0979
